Hill & Szork, London

Blurring the lines

Blurring the lines

Charlotte Brunt

Hill & Szrok  is a Master Butcher & Cookshop by day and a restaurant by night, just off Old Street roundabout. They sell their finest quality cuts of meat in the day and cook them in the evening. They cleverly combined the look and feel of an old fashioned butchers shop with marble worktops, hooks and a communal table but have also commissioned airtight fridges for the window so no smells would invade into the restaurant.
Hill & Szrok pride themselves on their ‘Britishness’ and source their meat by from small English farms, where free-range farming is encouraged. The meat is all hung, aged and carved on site below the shop. There are only eight main courses per night. The advantage of having an on-site butcher is that Szrok can adapt the menu to what is available each night. This makes for more creative dishes and pushes customer outside their comfort zone by trying new dishes.
This is a brand cleverly blurring the lines between retail and restaurant and taking advantage of the benefit that each facet brings.
